Carlos Lool
.Carlos Lool, founder of La Granja Rotisserie, was born in Guatemala and raised in Connecticut, where his culinary path began at the young age of 15 in the kitchen of a fine dining French restaurant. Inspired by high standards of quality and creative cuisine, Carlos developed a deep passion for food and hospitality early on.
After completing high school, he enrolled at the Connecticut Culinary Institute, graduating at the top of his class. Hungry to expand his skills, he moved to the West Coast and joined Michelin-starred Matsuhisa Beverly Hills under world-renowned Master Chef Nobu Matsuhisa, where he mastered the precision and elegance of Japanese culinary technique.
Carlos then joined the opening team at Bistro Laurent Tourondel (BLT) in Los Angeles, where he honed his expertise in the modern American steakhouse format. From there, he was recruited by SBE to help open XIV, a collaborative concept led by Michelin-starred Chef Michael Mina. Carlos played a key role in the launch and was soon promoted to Sous Chef at Katsuya Hollywood, where he worked under acclaimed Chef Daniel Elmaleh, continuing to refine his Japanese culinary techniques.
His career continued to evolve with leadership roles, including Chef de Cuisine at Fig & Olive, Newport Beach, where he oversaw operations at one of the group's flagship locations. He later became Executive Chef at Conservatory Restaurant in the heart of Hollywood, where he created an elevated, seasonal menu that transformed the venue into a destination for repeat guests and private events.
Prior to founding La Granja Rotisserie, Carlos served as Head Chef of BOA Steakhouse Santa Monica with Innovative Dining Group (IDG). There, he led high-profile offsite events for elite guests, including his final event: The LACMA Breakthrough Gala, a star-studded celebration attended by celebrities and influencers.
Now, as the founder and creative force behind La Granja Rotisserie, Chef Carlos Lool brings his global culinary background full circle. Located in Los Angeles, La Granja celebrates wood-fire rotisserie cooking with bold Latin flavors, chef-driven sauces, and a deep respect for quality ingredients. From the heart of Hollywood to the heart of the community, Carlos is building a brand where authenticity, flavor, and hospitality come together.
